There's usually some sort of schism in Elven history that led to a difference in beliefs, leading to two or more very different cultures that are both rooted in the same basic values of magic and beauty. There's almost always a variant of "light" and "dark" Elves under different names, but every so often you get "forest" Elves (such as in Zelda with the Kokiri) or some other unique offshoot like the radically minded Blood Elves in WarCraft.

I think, though, my favorite thing about Elves is the different denominations you often see. They're a whimsical, secluded race, and their mysticism and unapproachable beauty is what makes them so appealing. Their affinity for magic of all kinds lends itself to some amazingly unique architecture, history, and abilities that other races simply cannot achieve. They're almost always depicted as this impossibly beautiful race of people with culture very far beyond that of the other races they share space with.
